This Slow Cooked Mediterranean Artichoke Chicken was packed full of my favorite Mediterranean flavors!! My husband is Greek and grew up on a small island in Greece. He comes from a place where you have fresh ingredients to pick off the vine and herbs and spices growing all around you! I love cooking with lots of Mediterranean spices and herbs – they taste amazing and also make my house smell fantastic! Adjust the seasonings in this recipe to your liking, you cant go wrong! I added dill to mine because I love it! My mother in law made some fresh Tzadziki when we were there, and using dill always reminds me of her and our time in Greece. 🙂 Enjoy!
- 1 1/2 pounds chicken
- 1 can diced tomatoes, drained
- 1 can quartered artichokes, drained
- 1/2 cup chicken broth
- 1 tsp dried parsley
- 1 tsp oregano
- 1 tsp dried dill
- 1 tsp garlic powder
- 2 cloves garlic, minced
- 1/2 tsp black pepper
- sea salt, to taste
- Place chicken in slow cooker
- Mix tomatoes, artichokes, broth and all spices together in a bowl and pour over chicken
- Cover and set on High for 3 1/2 - 4 hours or low for 6 hours (cooking times may vary as some slow cookers cook faster than others!)
- You can also bake this recipe. Preheat the oven to 375. Place chicken into a baking dish. Combine all ingredients and pour over chicken. Cover with foil and bake for 35 minutes. Uncover and bake another 10-15 minutes until chicken is cooked through.
- Place all ingredients in gallon size ziplock bag.
- Seal bag.
- Rub the bag to mix the ingredients.
- Label the bag with a sharpie, double bag if you wish and place in freezer.
- 1 Red container of chicken and top with 1/2 - 1 green of tomatoes and artichokes.
- Serve with a side of roasted asparagus
