21 Day Fix Pumpkin Spice Overnight Oats

Hello FALL and everything PUMPKIN! The weather is still saying Summer, but I can’t help but be excited for some of my Fall favorites!! My 21 Day Fix Pumpkin Spice Overnight Oats were so delicious and I really enjoyed them this morning with my eggs. This meal kept me full for quite awhile and tasted like a sweet treat!

These were easy to assemble last night before I went to bed and they were waiting for me in the morning when I was ready for breakfast. I did pop them in the microwave for about a minute or so until they were warm. Perfect way to start the day!

The photos don’t do this justice at all – it is really difficult to capture oatmeal in a photograph and make it look super appetizing. 🙂

Hello pumpkin season and all things pumpkin spice!! This oatmeal recipe was DELICIOUS and very filling! I can't wait to make it again very soon!

Ingredients
  1. 1/4 cup old-fashioned (rolled) oats
  2. 1/4 cup pure pumpkin puree
  3. 1/2 cup unsweetened almond milk
  4. 2 tsp pure maple syrup
  5. 1/2 tsp pumpkin pie spice
  6. 1/2 tsp pure vanilla
  7. 1/4 tsp cinnamon
  8. 1 T flaxseed
  9. 1 T pecan pieces (optional)
Instructions
  1. Combine and mix all ingredients, except pecan pieces, in mason jar or airtight container
  2. Store in refrigerator overnight
  3. Open jar, add pecan pieces and a couple tablespoons of milk to thin out oatmeal
  4. Eat cold or heat in the microwave for about a minute
21 Day Fix Counts
  1. 1 Yellow, 1/2 Orange, 1/4 Purple, You can count the 1/2 cup (4 oz) unsweetened almond milk as Free (per Autumn) or as 1/4 Yellow beverage. If you add pecan pieces, add 1/2 orange

    This looks delicious and I am so excited to try it this coming week! It’s my first week on 21 day fix starting Monday. =) I am curious though where you get the count for the purple container with this? Pumpkin is a squash so wouldn’t that be a green container? Or I could see possibly a yellow like sweet potatoes and yams?

      Thanks Jordan! I hope you love this!! 🙂 One of my favorite breakfasts! 🙂 Pumpkin is a squash and I thought it was a green too, until I was corrected recently that pumpkin puree is a purple.     This looks so yummy I am going to try it this weekend!! Do you use ground Flaxseed or whole flaxseed??

      YAY! Let me know what you think! I use ground flaxseed. 🙂 It is just an easy way to get my orange container in for the day! 🙂

    Just curious as I’m finding new recipes for round 2 of 21 Day Fix. Pecan pieces would be 1/2 blue correct and not an orange, correct?

      Hi Laura! 10 pecan halves are equivalent to 1 blue, but if they are chopped, you measure them in an orange. (I know it is confusing!) If you used 10 pecan halves and chopped them up, you could count them as a blue instead. 🙂 Angela
