21 Day Fix Oatmeal Bake

This recipe for 21 Day Fix Oatmeal Bake is actually something I did as our early morning activity a couple days ago. Each morning, Zach wakes up between 6:30 and 7am and I like to have an activity planned for us to do while Noah sleeps in. Zach LOVES helping me in the kitchen and loves to be apart of the action – pouring, mixing, ‘helping me’ crack the eggs. He really enjoys it! This recipe was fun to make with him. He also enjoyed placing (and eating) the fruit on the top in a fun pattern.  Very simple and we have enjoyed a yummy breakfast for for a few mornings this week – easy, peasy.  (He also wanted to show off his Jake and the Neverland Pirate temporary tattoos in the photo!)

Serves 6
Such a fun and easy recipe to make with my 3 year old! We have been able to enjoy this all week for breakfast - both of my boys love it!

Ingredients
  1. 1 cup old fashioned oats
  2. 1 cup steel cut oats
  3. 3/4 cup pure maple syrup or agave
  4. 1 cup pecans, chopped & divided
  5. 1 cup raspberries, divided
  6. 1 tsp baking powder
  7. 1 T cinnamon
  8. 1 egg
  9. 1 T pure vanilla extract
  10. 2 cups unsweetened vanilla almond milk
  11. 1 banana, sliced
  12. Sprinkle additional cinnamon over top, optional
Instructions
  1. Preheat oven to 350 degrees
  2. Spray a 9x13 pan with coconut or olive oil
  3. In a medium bowl, mix oats, syrup, baking powder, 1/2 cup pecans, cinnamon and 1/2 cup raspberries
  4. In a small bowl, whisk together the egg, vanilla and milk
  5. Spread the oatmeal mix into the pan, pressing into the corners, making sure it is even
  6. Pour milk mixture over oat mix
  7. Top with remaining raspberries, pecans and sliced bananas
  8. Bake for 35 minutes.

  1. Serves 6: 1 Yellow, 1/2 Purple, 1/2 Blue

    Have you tried to freeze it? Does it freeze well? I’m amazed how filing it is! I can’t even finish my one serving!

    I made this for the first time and it seems a little soggy, is that how yours turns out too? It looks like it should be more crisp, maybe I’m wrong – what is the consistency of yours? It still tastes amazing, but just curious. Thanks!
